Mare’s eat oats and does eat oats and little lambs eat ivy, a kid’ll eat ivy too, wouldn’t you?
My husband is into making his own granola from scratch, thanks to our friend Really Rosie. Thus, there are oats all over my kitchen counters. Here is the recipe, but feel free to add any of your fave fruits, nuts and seeds to the mix.
BASIC GRANOLA RECIPE
3 cups rolled oats
2 tblsp. roasted flax seeds
1/4 cup each: chopped pecans, pumpkin seeds, sliced almonds, coconut
1/4 cup canola oil
1/2 cup maple syrup (NOT Aunt Jemima’s. Use the real stuff.)
Heat oil and maple syrup until warm. Add oil/maple syrup to oat and nut mixture. Spread on a cookie sheet and bake at 325 degrees for 20-25 minutes. Turn off oven and let sit in warm oven until golden brown. Add dried fruit: 1/4 cup of each: dried cranberries, raisins, dried blueberries, 12 dried apricots, chopped.
